It’s tempting to cook on a high heat or on a bigger hotplate or flame than the size of the pan. But heat that escapes around the pan is not useful for cooking. The heat that is escaping can also heat the thinner sides of the pan or the handle, making it really hot or damaging the pan or handle too. We also get this when the pan is not placed centrally. Have you ever noticed burnt food on one side and undercooked food on the other? So if you notice food burning or sticking on the sides then check if you are using the right size hotplate and that the pan is central. If using gas then check that the flame is not so high that it is licking up the side of the pan. This is an easy fix that saves energy and reduces bills and possibly also time spent scrubbing at the sink afterwards!
